Hey there, since (non vegan) people often ask me “How can you make fluffy pancakes without using eggs??”, I wanna share with you the simple answer to that question. So this is one of my all time favorite recipes for super tasty and fluffy apple pancakes. It’s kind of a healthy & vegan basic recipe, very easy to make and versatile. You can add more/different ingredients of your choice, like nuts, shredded coconut, more fruits or dark chocolate. Give it a try, I bet you’ll love it.

They say sunday is pancake day, right? Well in my book every day is pancake day?. So grab your pan and let’s make these yummy little guys together. It does not matter if you are a cooking beginner or a pro, this recipe is super easy. I personally prefer a less sweeter taste so maybe you wanna add more sweetener to the batter, just try out.
- 120 gr rolled oats
- 20 gr oat bran
- 5 gr / 1 tsp ground flax seeds
- 5 gr/ 1 tsp chia seeds
- 100 ml plant milk (I used unsweetened oat drink)
- 150 ml water
- 20 gr liquid sweetener of choice (maple syrup, rice syrup, agave syrup…)
- 3 tbsp apple sauce
- 1 medium apple (peeled, chopped to small chunks, drizzled with some lemon juice)
- 1/2 tsp cinnamon
- 1/2 tsp baking soda
- optional: 1 scoop vegan vanilla protein powder
- some oil for baking (I use coconut oil)
Glutenfree option: Replace oats and oat bran with glutenfree oats (or gf oat meal). Also you can use any glutenfree flour, e.g. wholewheat rice flour or buckwheat flour work well too.
Blend your oats, oat bran, baking soda, flax seeds, protein powder and cinnamon until it gets like a flour. You can use your blender or a food processor or maybe a good immersion blender.
Now blend the flour mixture with all the wet ingredients (except for the apple chunks) and the chia seeds and let it rest for about ten minutes. Now add the apple chunks and stir. The batter should be smooth and not too liquid.
Heat a lightly oiled frying pan over medium high heat. Pour or scoop the batter onto the pan, using approximately 1/4 cup for each pancake. With wide spatula, turn carefully (!) and cook until underside is golden. Transfer to a platter; keep warm.
Repeat with remaining batter, brushing griddle with more oil if necessary.
That’s it! Easy, right? I like to serve the pancakes hot and with some maple syrup on top. So yummy and fluffy and naturally sweet. I just love the hot apple chunks inside! How do you prefer to eat your pancakes?
