Today I was in a blue mood. Well, not in a sad mood but in the mood for blueberries. They are one of my absolute favorite berries and although it isn’t blueberry season in Germany yet I could not resist to buy some at our local farmers market. They do not taste as good as in summer but still they have this sweet and sour flavor that I like so much. This breakfast smoothie is easy to make, tastes super yummy and it keeps me full for a few hours. Big blueberry love!
The power of Superfood Blueberries
Furthermore blueberries have a wonderful combination of tastiness and nutritional benefits. These berries are low in calories and have high age-defying antioxidant content, the ORAC (method of measuring antioxidant capacities) score of blueberries is an incredible 9,621, which makes it one of the highest antioxidant foods in the world. And thats why it is called a superfood or even a beautyfood. Blueberries are good for your brain, your skin, your digestion and they can support weight loss. But the most important fact to me is: they taste amazing.
There are those mornings when I don’t feel like having a warm and heavy breakfast and all I crave are fresh fruits. But I also wanna stay full for a few hours because I don’t have the time to eat a healthy snack every hour. Who does? That’s why I like to enrich my smoothies with vegan protein powder, oat bran or plantbased yoghurt. Or – like in this case – with all three of them.

Ingredients
1 cup of blueberries (I recommend organic blueberries)
1 frozen small banana
1/2 cup oat bran
1/2 – 1 tsp flax seeds
2-3 tbsp unsweetened plantbased yoghurt or plantbased milk
200 ml water
dash of fresh lemon juice
fresh mint leaves
vegan protein powder (optional)
method
In your high speed blender mix frozen banana and liquids first. Then add other ingredients and blend until smooth. Add more water or plantbased milk if smoothie gets too thick. Cheers!
You can fill your breakfast smoothie into a mason jar and take it with you to work or school. I like to drink this protein smoothie post workout, it refuels my empty batteries. And I mean this color just makes me happy?!
