Spring is back and I’m totally into healthy smoothies again. I really enjoy the fruity and refreshing energy drinks in the morning, yum. It’s been awhile since I posted a smoothie recipe here on the blog so I thought I’d show you one of my current favorites today: A green avocado smoothie with fresh mint. This smoothie is super delicious, its silky and smooth texture reminds of a cream dessert – but in a healthy way. Superfood avocado makes this a nutritious beauty drink that keeps you full until lunchtime. The perfect breakfast or if you are in a hurry you can easily take it with you.

Yep, avocados are a fruit (fruits have seeds, vegetables don’t), furthermore they are called a superfruit. Avocados are packed with monounsaturated fat and fatty acids that can help lower bad cholesterol levels while raising the amount of good cholesterol in your body. These fruits contain many important vitamins (such as the antioxidant vitamin), fiber and minerals (such as magnesium, calcium, zinc, iron). The healthy fats in avocados keep you full for a long time and can also help you lose weight – and you can use it as a moisturizing hair and skin treatment as well.
Most important they taste amazing and are very versatile: from toast toppings to guacamole to creamy desserts and smoothies. You gotta love this rich, velvety texture and mild flavour. And I mean, how beautiful does it look?
Are you a fan of green mint or peppermint? Because I am! I always have some fresh green mint plants in my garden and I love to add these refreshing herbs to my smoothies, teas and also to salads and dips. Fresh mint contains trace amounts of iron, fiber, vitamin A and potassium.
The creamy avocado in combination with fresh green mint is so good, you really should give it a try. The sweetness in this smoothie comes from a medjool date and a frozen banana, you can use a fresh ripe banana too if you prefer.
Creamy smoothie with avocado and green mint (vegan)
- 1/2 avocado, ripe
- 2 handfull fresh spinach
- 1 small frozen banana
- 1 medjool date, pitted
- 50 ml almond milk, unsweetened
- fresh mint leaves
Gently wash spinach and mint, peel avocado and remove the seed.
In a high speed blender mix spinach, mint leaves, banana and date with some water. Add avocado and almond milk and blend until the smoothie is smooth and creamy. Enjoy!
